Fridge vs. Room Temperature: How to Store Eggs Correctly

Should you refrigerate your eggs? We explain the science of egg safety and how to keep them fresh for longer.

In many Indian households, eggs are kept in a basket on the kitchen counter. In supermarkets, they aren't refrigerated. Yet, most refrigerators come with a dedicated egg tray. So, what is the right way to store them?

The Salmonella Factor

In countries like the US, eggs are washed before sale, stripping the protective outer layer (cuticle). This necessitates refrigeration to prevent bacterial growth. In India, eggs are typically sold unwashed, keeping the cuticle intact, which protects the porous shell from bacteria.

Why Refrigeration is Still Better

Even though unwashed eggs can stay at room temperature, refrigeration dramatically extends their shelf life.

  • Room Temp: Fresh for 7-10 days.
  • Refrigerated: Fresh for 30-45 days.

Best Practices for Storage

  1. Don't wash them until use: Washing eggs and then storing them removes the protective coating, allowing bacteria to enter the pores.
  2. Store in the main body, not the door: The fridge door temperature fluctuates every time you open it. The middle shelf is the coldest and most stable spot.
  3. Keep them in the carton: The original carton prevents moisture loss and stops the eggs from absorbing strong odors from other foods (like chopped onions).

The Float Test

Not sure if an old egg is still good? Drop it in a bowl of water.

  • Sinks to the bottom: Fresh and good to eat.
  • Floats: Rotten (gas has built up inside). Throw it away.
